  1. 2 cups Long grained basmati rice - Boiled
  2. 1.5 cups Tomato puree
  3. 1 tbsp Olive oil
  4. 2 Garlic cloves finely crushed -
  5. 1/4 cup Boiled corns
  6. As needed Vegetables like capsicum, carrots, beans, onions, deseeded tomatos, spring onions
  7. as per taste Salt
  8. 2 tbsp Tomato sauce
  9. 2 tbsp Mexican masala
  10. as per taste Lemon juice
  11. as needed Fresh coriander to garnish

Instructions to make to make Mexican Rice

  1. For the mexican masala, in a pan, add some cumin seeds and some coriander seeds. Dry roast them. Add dried oregano, pinch of salt and red chilli powder. Grind them together to a powder and store it in an airtight jar. For the rice, take a big deep pot add oil, saute onion and garlic one by one till pink.
  2. Add all the veggies one by one and cook them a bit on high flame.Add the tomato puree, sauce and keep cooking till the water in the puree evaporates. now add salt, the masala, lemon juice. Add the boiled rice and gently toss such that each rice grain gets well coated with the tomato puree.
  3. Check the seasoning, add some more greens of spring onions and coriander..this rice is very awesome in taste & don't worry if a small bowl of this rice is left. use these leftover rice in your burrito. Check out my next mexican recipe!!
