- For Rice:
- 1 cup basmati rice
- 1 tsp ghee
- 1 bay leaf
- 1 clove
- 1 cinnamon stick
- 2-3 drops lemon juice
- 1 green cardamom
- as required Salt to Taste

- For vegetables:
- 1/2 capsicum
- 1/2 carrot
- 1 piece cauli lower
- 3 tsp green peas
- 4 tsp beans
- 3 tsp curd
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1/2 turmeric powder
- 1 pinch hing
- 1 tsp kasuri methi
- 1 tsp biryani masala
- 1 tsp oil
- 1 tsp cumin seeds
- as required Salt
- as required Water as required
- For assembling:
- 1 tsp ghee
- 4 tsp fried onion
- 2-3 tsp milk
- 6-7 threads kesar
- some Garnish: fried kaju, kismis & fresh coriander leaves
Instructions to make to make Matka Biryani
- Wash and soak rice for 10 minutes. Soak kesar in milk. Chop veggies as required.



- Boil water for rice. Add bay leaf and khada masala, salt and ghee in it. Cook till its 80% and then strain it to cool down. You can add cold water to stop the cooking process.



- Take a wok, add oil and fry the chopped onions. In a bowl add curd and all masala for marination.



- Now add all chopped veggies, mix them well and give rest for 10 minutes. After that in a wok fry them till 80% cooked.


- Now take a matka and put rice and spread its layer. Now put a layer of vegetables. Repeat the same for 2nd time. Take a tadka pan, add ghee and fry the dry fruits.



- Finally put fried onions, kesar milk and fried dry fruits. And cover the matka with aluminum foil and cook the biryani on low flame for 10 minutes.


- After that open the cover and you will find the delicious and aromatic biryani is ready to serve. Serve it hot with papad, salad and raita of your choice and enjoy😊
