  3. 1 tsp Jeera
  4. 1 Bay Leaf
  5. 3 Cloves

  9. 1 Big Sized Onion Sliced
  10. 1 Big Sized Tomato Sliced
  11. 2 Potatoes diced or sliced
  12. 8-10 Cauliflower Florets
  13. 5-6 Beans (cut in long pieces)
  14. 1 Capsicum Sliced
  15. 1/2 cup Green Peas
  16. 1 tsp Ginger Garlic Paste
  17. 1/4 tsp Turmeric Powder
  18. 1 tsp Red Chilli Powder
  19. 1 tsp Dhania Jeera Powder
  20. 1/4 tsp Garam Masala
  21. to taste Salt
  22. 1.5 cups Water (adjust as required)
  23. 3 tbsp Green Coriander Leaves chopped

Instructions to make to make Vegetable Tehri

  1. Wash and soak basmati rice in enough water for at least half an hour. Drain excess water and remove rice in strainer and keep aside.
  2. Heat oil in pot or pressure cooker. Add jeera, bay leaf, cloves, green cardamom, black cardamom and cinnamon stick. Saute for a minute.
  3. Once jeera splutters add sliced onions and saute till it turns translucent and then add ginger garlic paste and cook for a minute.
  4. Add sliced capsicum and green peas. Mix well. Further add vegetables and tomatoes, mix well and add turmeric powder, red chilli powder, dhania jeera powder, garam masala and salt. Mix all well. Cook for 2 to 3 mins on medium flame.
  5. Add drained rice, water and gently mix and bring it to a boil on high flame. Once it boils lower the flame to medium and cover with the lid and cook till rice is cooked completely.
  6. Garnish with chopped green coriander leaves and serve vegetables tehri with raita or papad.
